Roanoke City Schools launch “Star City Eats” to tackle food insecurity

Roanoke, Virginia – Recent data from Feeding America indicates that Southwest Virginia’s food insecurity rate is 2% above the national average. Recognizing this, Roanoke City Public Schools took an initiative this summer to address this concern within their community.

“Our school serves as a focal point in the community,” stated Verletta White, the Superintendent of Roanoke City Public Schools.

The school district introduced Star City Eats, a student-managed food truck, to assist those facing food insecurity.

White elaborated, “Through our USDA grant, students can avail meals at no cost.”

The inception of the Star City Eats food truck has been a long-standing ambition for the Roanoke City Public Schools. “This endeavor is deeply meaningful to both the institution and to me personally,” White expressed. Ellen Craddock, the Director of Food Nutrition for the school district, added, “Our vision for years has been to establish a food truck that would directly benefit the community, especially during summer months when students often lack access to school meals.”

The food truck, fully financed by USDA grants, boasts a professionally equipped kitchen and sports a design selected by the students.

Beyond addressing food insecurity, the initiative also provides students with valuable experiential learning. “Our goal is to equip students with a diverse skill set and experiences that serve them throughout their lives,” White explained. Furthermore, Craddock mentioned the provision of two internships, allowing students to add a practical work experience with the school’s food nutrition department to their resumes.

The truck doesn’t just deliver food but also fosters community engagement. White remarked, “Through this initiative, we not only promote literacy and school preparedness but also extend essential food and nutrition services to our students.”

While the summer season is nearing its conclusion, the school’s leadership confirms that the Star City Eats truck will return next summer and also make appearances during specific events in the upcoming academic year.
